- 2 green apples
- 10 ml white rum
- 20 g sugar
- 1 bunch of mint
- Water (as required)
- Lemon ice cream
- 2 peaches
- 10 cl Bourbon whiskey
- 30 cl maple syrup
- 50 cl sugar syrup
- 5 speculoos spiced biscuits
First, peel the apples and dice into 2 cm cubes.
Blanch the mint and cool it on ice. Crush it with a little cold water. Next, add the sugar and the rum until it is perfectly blended.
Thicken part of the liquid to obtain a mojito gel. Pack the apple with the rest of the liquid and leave to soak for 1 hour.
While the apple is soaking, mix the Bourbon, maple syrup and sugar syrup. Peel the peaches, cut them into segments and pack them with the mixture. Cook in the SmartVide at 85 ºC for 30 minutes.
After half an hour, take out the bag and lightly brown the peaches using a blowtorch.
To serve, place the apple, peaches, biscuits and a few dots of gel on a plate, and finish by adding the lemon ice cream.
In this recipe, the vacuum helps to infuse the apple and peaches so that they absorb all the flavour of the juices.
