“Good Morning. I have a combi steam oven and a vacuum packing machine. Can I use the cooking times and temperatures that you have on your website? Thank you!”

The temperatures and times we have on our page are standardised for immersion. While it is true that some of them will be similar, bear in mind that although both methods are low temperature cooking, they are not equally accurate. In addition, all the temperatures and times on our list are indicative, so I would recommend that you use them as a reference and carry out your own tests.
