Sous-vide marinated mussels


  • 500g of clean mussels
  • 1 onion
  • 30g fried tomato
  • 50g white wine
  • 50g vinegar
  • 50g virgin olive oil
  • 2 lemon skins
  • 2 orange skins
  • 5g of paprika
  • 20g ginger
  • 1 bay leaf


We’ll make the marinade first. Put all of the ingredients except the mussels into a bag and cook in the SmartVide at 85ºC for an hour and a half.

Then, pack the mussels with a little white wine and cook at 90ºC for 5 minutes.

To finish, mix everything together and serve right away.

In this recipe, the vacuum helps us to enhance the flavours and achieve even cooking.
