Low temperature egg with vegetable pisto

Firstly, we would like to point out in this recipe that our chef has not indicated quantities because the procedure is the same regardless of the number of diners.

To make this recipe, first use the Sammic cutter to dice all the vegetables the into cubes of the same size. Next, place the vegetables in a pot and cook them. When they are poached, add the crushed tomato and finish cooking the vegetable pisto.

While making the pisto, place the eggs (one per person) in the SmartVide at 64ºC (147ºF) for 36 minutes.

Next, change the inner blade of the Sammic cutter with a simple movement and slice ​​the plantain banana. To finish, fry the banana and reserve it in absorbent paper.

To serve, place the vegetable pisto on a plate and very carefully place the slow-cooked egg on top. Finally, place the fried banana in a separate basket to accompany the dish and finish it with a little spicy paprika on top.
