Ingredients
- 2 shelled lobster tails
- 20g butter
- chives, to garnish
- 2 tablespoons mayonnaise
- 2 tablespoons lemon juice
- 10g shallot, chopped
- 5g capers, chopped
- 10g Dijon mustard
- Brioche finger rolls
- Salt
- Pepper
Preparation
First, season the lobster tails with salt and pepper and pack them with a knob of butter. Cook them in the SmartVide sous-vide cooker at 56 degrees Celsius for 40 minutes.
Once cooked, take out the lobster tails and cut them into large pieces.

Mix these pieces with the mayonnaise, lemon juice, shallot, capers and Dijon mustard.

Next, open out the rolls and brown them in a frying pan with butter. Finally, fill the brioche rolls and garnish with a sprinkling of chopped chive.
In this recipe the sous-vide helps us to cook the lobster in its own juice and retain all the flavour during cooking.
