Ingredients for the sous-vide cochinita pibil or slow roasted pork:
- 1 kg pork loin
 - 100 g annatto in paste
 - 200 ml bitter orange juice
 - 200 ml chicken stock
 - 2 bay leaves
 - 5 g ground cumin
 - 3 g dried oregano
 - 5 g ground white pepper
 - 5 g ground black pepper
 - 5 g ground cinnamon
 - 3 crushed garlic cloves
 - 20 g chipotle chilli marinade
 - 15 g salt
 - 30 g Iberian pork lard
 
Blend the annatto diluted in the orange juice in the blender, add all the other ingredients and continue blending until you get a creamy marinade.
Pour over the meat, coating evenly and place in the vacuum bag and leave to marinate in the refrigerator for about 8 hours.
Cook in the SmartVide for 16 hours at a temperature of 80ºC / 176ºF.
