White chocolate and peanut rocks


  • 300g of white chocolate
  • 65g of cocoa butter
  • 35g peanut praline


First, put the chocolate, cocoa butter and peanut praline in a bag. Put the bag into the SmartVide and cook at 53ºC for half an hour.

Then, cool the mixture to 33ºC. Put into the syphon in three loads and shake it.

After that, put the mixture into the external container and use the vacuum machine to create a vacuum and reduce the mixture to half the volume. Then freeze.

Once cold, take out the chocolate rocks and break it into pieces.
