How do I regenerate a beef steak?

A user asked the following question:

Hello Chef! I cooked a 450gr steak at 55ºC for two hours. I’ve stored it in the fridge until tomorrow and I’d like to know what temperature and time are suitable for regenerating it without overcooking the meat. I’ll sear it on the hotplate before serving.

“Thanks for your question. To prevent the meat from overcooking, all you need to do is regenerate it below the cooking temperature. I recommend that you do it at 40ºC, for at least 20 minutes. That way, you can later sear it and serve. Thanks for the message!”
