Infused oil: temperature

A user has asked the following question:

At what temperature can we make an infused oil?

This was the response of our chef Enrique Fleischmann:

“The temperature of the infused oils varies depending on the ingredient to be infused. That is to say, each ingredient has its optimal aromatisation temperature point. In any case, in practice, 70ºC – 80ºC would be a logical temperature for aromatisation. The longer we leave the infusion in the heat, the greater the transmission of flavour. Above all, in products that release essential oils.”
