Vacuum-packed onions, but crispy?

We received the following question in our Ask the Chef section.

“Hello, Chef. How can I cook Tropea onions with vacuum cooking to make them crispy?”

This was Enrique Fleischmann’s reply:

“Hello. Vacuum cooked products are not capable of being crispy without a post-vacuum cooking treatment. We can carry out a vacuum cooking, which will always be moist and soft, and, subsequently, we can treat that ingredient so that it can change the organic characteristics. Frying, roasting, grilling, ironing, etc.”
