Can we insert the bag without the water having reached the desired temperature?

A user asked the following question:

Can we insert the bag with the food in the vacuum before the water has reached the desired temperature?

This is how our corporate chef Enrique Fleischmann answered:

“I would recommend inserting the food once the program temperature has been reached. In this way, we can better control the start of the cycles, particularly if we want to have a standardised time and temperature cycle. Therefore, my recommendation would be always to start cooking once the water has reached the correct programmed temperature.”
