Hake and cod kokotxas (fish throats)

A user has asked the following question: 

“What would be the temperatures and cooking times for hake and cod kokotxa?”

Enrique replies: 

“For hake kokotxa we do the following: Clean the kokotxas, add some garlic oil and put them to cook in a bath at 70ºC for 12 minutes. Before entering the bath, the kokotxas are usually at 4ºC. 

For the cod kokotxa the temperature is the same, but the time goes up to 20-25 minutes, depending on the thickness.
