Is it possible to cook foie gras in 250g jars in the thermocirculator at 65ºC for an hour and a half? Thanks in advance.
This was the answer from our chef.
“Yes, it’s possible. Working in jars is not a problem, you can even put them into a vacuum bag to make the system more reliable.
However, when the cooking is over, it’s very important to let the jars cool on a rack in order to lower the temperature as soon as possible.”
