- 2 chicken breasts
- 200g of fresh sausages
- 1 bunch of wild asparagus
- 1 egg
- 10g of sherry
- 1 piece of cheddar cheese
- Mashed potato flakes
To start with, make the forcemeat by mixing the sausage meat with the egg, the sherry, salt and pepper.
Then, open the chicken breasts flat, season them, add a layer of the forcemeat and put a piece of cheese at the end. Start to roll from the end with the cheese, using some cling film to help.
Once the roll is complete, cook it in the SmartVide at 65ºC for one and a half hours.
Take the roll out of the bag and remove the cling film, coat it in flour, egg and the potato flakes and fry it.
To finish off, cut it into slices and serve.
In this recipe, the sous-vide helps us to stop the meat from becoming dry during cooking and also intensifies the flavours.
