Can potatoes be prepared for a tortilla using the sous-vide technique?
This is the answer from our chef:
Yes, using the vacuum cooking technique you can prepare potatoes for a tortilla with no problem at all. To do so, the most important thing is to cut the potatoes in a uniform manner. The smaller the potato, the faster this will be done, but at the same time it’s important that it’s not too small so it doesn’t fall apart.
You can place all the ingredients in the bag, including the oil, onion, garlic, salt and whatever else you are going to add. Create the vacuum and cook in the thermocirculator at 90º for approximately 45-50 minutes.
After that, take out the bag, drain and it’s ready to use.
