How to cook stuffed rabbit for 2 persons

Ingredients

  • 1 rabbit
  • Fried
  • 2 onions
  • 1 green pepper
  • 50 gr of foie mi cuit
  • 1 egg yolk
  • 200 gr of beef mince
  • 30 gr of rice
  • 50 gr of butter

Rabbit base

  • 1 garlic bulb
  • 2 carrots
  • 2 onions
  • 50 gr of soya

Chop the onion and the pepper and fry. Add the foie, minced meat and egg yolk. Mix well and remove from heat.

Debone the rabbit and strech it well. Stuff the rabbit with the mixture and make a loop. Put it into the vacuum bag and cook it in the SmartVide for 20 minutes at 65ºC / 122ºF.

Introduce the garlic, the carrots and the onions in the oven and roast until golden brown. Add some watter and cook them for 4 hours. Add the soya, strain it and set to half.

Cook the rice for 18 minutes. Add the rabbit juice (1/2 litre / qt) slowly as it’s necessary, moving it until you get a creamy rice.

Finally, add a dice of butter and melt it well.

To serve

Serve the rabbit with the rice and sauce.
