The meat of the chicken is a healthy food that is of high nutritional value, and is very common and popular in our region. That’s why for today we have chosen stewed chicken, which will help us face the day with the energy and strength that a cook needs!
- 8 Lumagorri chicken drumsticks
- 1 white onion
- 1 red bell pepper
- 1 leek (white part)
- 1 carrot
- 1 plum tomato
- 2 garlic cloves
- 1 bay leaf
- Pinch of oregano
- Pinch of cumin
- 1 tablespoon of sweet paprika
- 1/2 teaspoon of chipotle chilli paste
- 1 glass of Rueda white wine
- Glass of white chicken stock
- Salt and ground black pepper
Begin by burning the chicken feathers and remove the excess fat. Season with salt and pepper and brown in a pan. Set aside.
Chop the onion, pepper, leek, carrot and garlic with a brunoise cut (finely!) and start to fry lightly and slowly in a wide saucepan, stirring every 5 minutes. When the vegetables begin to caramelise add the bay leaf, oregano, cumin, paprika, chipotle chilli, salt and pepper. Lightly frying the spices will help to enhance their flavour. Now add the grated tomato with the white wine and the stock. Cook together for 15 minutes over a low heat until the juices are reduced and turn into a thick sauce. Cool.
Now place the chicken drumsticks with the sauce in the bag and cook in your Smartvide at 80oC for 2 hours.
When it is ready, open the bag and eat! You can also cool it immediately and keep it for eating later, regenerating in the Smartvide.
You can accompany the chicken with rice pilaf, finely sliced “panadera” potatoes or some steamed vegetables. You can also make more sauce and save it in the bag in the refrigerator or even freeze it so that later on you can make yourself a chicken stew in a jiffy.
