“I would like to know, once we have cooked a magret using the sous-vide technique, how long can it be stored for if refrigerated? Many thanks in advance.”

“Thanks for your question. The storage life you can expect will depend on how long you’ve cooked the magret for. Here you can download a table with the legal minimum pasteurisation temperatures and their interpretation so that you can work out the maximum storage days.
