Recipes for athletes: Garlic soup with egg

I know how to take care of myself before and during the game, but what about afterwards? What can I eat to recover from a game?

I recommend a garlic soup with egg.

INGREDIENTS:
  • 300 g garlic
  • 750 ml chicken stock
  • 1 sopako bread
  • 1 egg
  • 5 g paprika
  • oil
  • salt
PREPARATION:

Start by cutting the garlic cloves in half and roasting them in the oven at 180ºC (356ºF) with a little salt and oil until golden brown. Afterwards, leave them to cool and package them with the chicken stock. Once packed in a vacuum bag, cook it in the SmartVide for one hour at 72ºC (161,6ºF).

Also cook the egg in the cooker at 69ºC (156,2ºF) for 20 minutes. Once cooked, put it to one side.

Next, strain the garlic stock and place a little oil in a pan to fry the paprika with the stock. To finish, add the bread until it is well soaked.

To serve, place the soup and the egg in a bowl and sprinkle a little paprika.

Aitziber Aizpuru COMMENT:

As mentioned in the previous recipe, it is advisable to hydrate and eat properly in the first hour after the game.  To do so, use recovery drinks such as isotonic drinks.

However, subsequent intake of solid foods will continue to restore muscle glycogen levels so it is very important that the next intake is high in carbohydrates accompanied by protein food to promote protein synthesis and muscular glycogen recovery.

Chef’s COMMENT:

The vacuum helps to make the stock thinner because it is not boiled. It also extracts all the flavour and aromas of the stock.
