Cochinita pibil (slow-roasted pork) a la sous-vide

Ingredients for the sous-vide cochinita pibil or slow roasted pork:

  • 1 kg pork loin
  • 100 g annatto in paste
  • 200 ml bitter orange juice
  • 200 ml chicken stock
  • 2 bay leaves
  • 5 g ground cumin
  • 3 g dried oregano
  • 5 g ground white pepper
  • 5 g ground black pepper
  • 5 g ground cinnamon
  • 3 crushed garlic cloves
  • 20 g chipotle chilli marinade
  • 15 g salt
  • 30 g Iberian pork lard

Blend the annatto diluted in the orange juice in the blender, add all the other ingredients and continue blending until you get a creamy marinade.

Pour over the meat, coating evenly and place in the vacuum bag and leave to marinate in the refrigerator for about 8 hours.

Cook in the SmartVide for 16 hours at a temperature of 80ºC / 176ºF.
